For this Eggless Fruit Cake, I have used spices like cinnamon, nutmeg, cardamom and all spice. You may also add some ground ginger to the cake. Line the base with greaseproof paper. Add Butter and mix until melted.

Steps to make Eggless Mix fruit cake:
  1. Sieve the flour,baking soda, baking powder thrice.
  2. On a mixing bowl add melted butter, powdered sugar, condensed milk, vanilla essence. Mix very well and now pour dry ingredient into wet mixture.
  3. Use cut and fold method to combine. Add mixed fruits (I used pineapple, strawberry and cherries) and dry fruits. Side by side preheat the pan for 10 minutes with salt and stand.
  4. Pour the batter into greased tin and tap twice. Place the tin and bake for 45 minutes. When it's done check with toothpick.
  5. Now allow the cake to cool completely. Demould the cake and cut into two layers.
  6. Pour the cream in chilled mixing bowl and use hand blender to whip the cream. Then add powdered sugar and strawberry essence and whip for desired peak. Don' t over whip the cream.
  7. Now apply sugar syrup and spread whipped cream in between the layers. Then apply sugar syrup on the upper layer and spread layer of whipped cream on the top of the cake and make a smooth texture.
  8. Spread the whipped cream evenly on the wall and corners of the cake. Now place the cake in fridge for an hour.
  9. Take the cake out and decorate with mix fruit like orange rinds, cherries, dry fruits, sesame seeds.
  10. Slice the cake and serve.

Line the base with greaseproof paper. Add Butter and mix until melted. Add Vanilla Extract and Rum or Brandy (optional) and mix. Slowly incorporate (fold in) the dry ingredients into the wet. Add the flour mixture into the condensed milk, mix it well with spoon and beat properly, add water in between then add vanilla essence and beat it well.
