When writing my cookbook Pierogi Love: New Takes on an Old-World Comfort Food, I made a lot of pierogies. Some of these pierogi types are traditionally Polish dumplings, but let me be honest - The number of fillings is countless and limited by your imagination. Did you know there is a "Pierogi Parade"? It's part of the Edwardsville Pierogi Festival this June. Savory dumplings filled with potato, onion and cheese, these Pierogi are first boiled, then sauteed with butter and onions.
Steps to make Pierogi:
- Para hacer la masa: poner sobre la mesa la harina con una pizca de sal. Mezclar el agua caliente con la mantequilla. Batir el huevo. Agregar a la harina poco a poco el agua con la mantequilla mientras al mismo tiempo vas incorporando esta masa con tus manos (amasando). Agregar el huevo y amasar hasta que quede una masa homogénea. Dejar reposar envuelta en aluminio por 30 minutos.
- Mientras la masa está reposando puedes hervir las papas y picar la cebolla en cuadritos pequeños. Poner la cebolla a acitronar en dos sartenes con aceite de oliva.
- Machacar las papas una vez hervidas hasta que queden con una consistencia grumosa. Agregar el puré de papá grumoso a uno de los sartenes y mezclar hasta que queden unificadas las papas con la cebolla. Agregar sal y pimienta. Apagar el fuego y agregar poco a poco el queso feta. Al agregarlo irlo deshaciendo con las manos. Salpimientar al gusto.
- En el otro sartén agregar a la cebolla la carne y dejarla cocer. Puedes agregar consomé de vegetales en polvo previamente diluido con agua si deseas un toque con más sabor y la carne menos seca. Salpimientar al gusto. Agregar la zanahoria rallada al gusto para darle un sabor ligeramente dulce.
- Después de 30 minutos (mínimo o puedes dejar más tiempo la masa reposar) con un rodillo extender la masa sobre la mesa. Hasta que quede lo más delgada posible sin que se rompa fácilmente. Una vez que la masa este aplanada puedes ir haciendo pequeños cortes en forma de círculo (puedes usar un vaso para ayudarte). Rellenar cada círculo de masa con los rellenos de los pasos anteriores, doblar cómo quesadilla y cerrar los bordes con los dedos. Asegurándose de que queden perfectamente cerrados.
- Poner agua en una cacerola grande a hervir. Una vez que esté hirviendo arrojar los pierogi hechos en el paso anterior al agua. Inicialmente los pierogi se hundiran y sabrás que la masa está cocida cuando comienzan a flotar.
- Cuando floten sacarlos de la olla y ponerlos a escurrir, para drenar el exceso de agua.
- Servirlos y disfrutar con vino!
