  1. Prepare 400 gr Duck breast fillet
  2. Get Salt & pepper

  6. Make ready 2 tbsp Soy sauce
  7. Prepare 2 tsp Brown sugar

Heat up a frying pan or skillet to high heat and place the duck breasts skin-side down into the pan. Using a pestle and mortar, grind the juniper berries, caraway seeds, allspice, one teaspoons of salt and a few grinds of pepper to a powder. Lay the duck breasts, skin side down, in a dry heavy-based large frying pan and gradually turn up the heat. Bring a pan of salted water to the boil, cover with a steamer insert then add the carrots, cover and steam for two minutes.

Steps to make Duck breasts fillet with orange sauce:
  1. Preheat your oven in to 170 degree celcius
  2. Using a sharp knife, cut a crosshatch into the skin, be careful not to cut into the meat below. This help to ensures that the fat under the skin will render quickly
  3. Dry it up with kitchen roll
  4. Season the duck breasts with salt and pepper
  5. Heat some oil in a non stick skillet
  6. Sear both side of the duck breasts, 4 minutes for the skin side, and 3 minutes for the meat side
  7. Transfer the duck breasts in to the oven, and let it bake for 20 minutes
  8. Take the duck breasts from oven, place it on a cutting board, and slice it
  9. Place it on a plate, pour the orange sauce to the meat, and serve it
  10. For orange sauce: - 1. Boil some water in a cooking pot - 2. Add the orange peel, let it cook for 5 minutes - 3. Using a strainer, take out the orange peel from the water - 4. Place a cooking pot on the stove, and then add the white wine, soy sauce, brown sugar, chicken stock, stir it, and bring it to a boil - 5. Add the orange juice, Let it cook until the sauce thickened, and then add the sliced boiled orange peel. Stir it evenly.

Lay the duck breasts, skin side down, in a dry heavy-based large frying pan and gradually turn up the heat. Bring a pan of salted water to the boil, cover with a steamer insert then add the carrots, cover and steam for two minutes. Add the courgettes and steam for another three minutes until just tender. Remove sauce from heat and swirl in butter until melted and evenly incorporated. Season sauce with orange juice and zest, salt, and black pepper.
