Hey everyone, it is me, Dave, welcome to our recipe page. Today, we’re going to make a special dish, huevos rancheros. It is one of my favorites. For mine, I will make it a bit unique. This is gonna smell and look delicious.

Huevos Rancheros is one of the most popular of recent trending foods on earth. It’s enjoyed by millions daily. It is easy, it is fast, it tastes yummy. They are nice and they look wonderful. Huevos Rancheros is something that I’ve loved my entire life.

To get started with this recipe, we have to first prepare a few components. You can have huevos rancheros using 12 ingredients and 6 steps. Here is how you can achieve that.

The ingredients needed to make Huevos Rancheros:
  1. Take 250 g roughly chopped and sliced fresh multicoloured tomatoes
  2. Take Sea salt
  3. Prepare 1 good Glug of extra virgin olive oil
  4. Take 1 tsp thyme
  5. Get 1 tbls pickled jalapeños
  6. Prepare 1 tbls coriander stalks plus a few leaves
  7. Take 2/3 can (300 g) black beans, drained
  8. Get 1/2 avocado, sliced
  9. Prepare 1 lime
  10. Take 4 tortillas
  11. Get 2 eggs seasoned, whisked per person. Use scrambled tofu as a substitute if you like
  12. Take 30 g cheddar cheese, cubed
Instructions to make Huevos Rancheros:
  1. Sprinkle sea salt over chopped and sliced tomatoes then drizzle heavily w olive oil, sprinkle over lots of thyme (tomato salad)
  2. tablespoon chopped jalapeños with tbls juice and similar amount fresh coriander in a blender and whizz. tip in to bowl and fold a little evoo through it (salsa)
  3. pan on medium heat. add oil, add pinch cumin. add a layer of black beans and they will puff up. add a little seasoning and listen for the puffing. no need to stir or shake, just don't burn them! in bowl
  4. cut avocado in to 8. plate up and squeeze over lime juice. coriander leaves on top
  5. Heat tortilla on one side only in dry pan. <1 minute. push it quickly in to mug to form a cone shape. repeat.
  6. Pan on medium heat with evoo and nob butter. add whisked eggs. using spatulas, move from outside in to create little sheets. when half cooked turn the heat down and put in the chopped cheddar..Serve loose as it will continue cooking on the plate
