Roasting the broken wheat in ghee gives the Gujarati broken wheat sweet a rich brown colour, intense aroma and nice flavour. Lapsi is a traditional cracked/broken wheat dessert, which is a moist and soft pudding oozing with the richness of the clarified butter/ghee.

The original recipe calls for ghee and regular milk, but you can very easily make this vegan by using coconut oil and almond/cashew milk. Lapsi or broken wheat dessert is a very famous dessert from Gujarat, and unlike other Indian desserts, it doesn't take too long to make!

Instructions to make Lapsi (broken wheat dessert):
  1. In a pan heat some ghee..
  2. Now add cinnamon stick, cloves & broken wheat in ghee & mix well…keep stirring till the grains change colour…
  3. Now add chopped almonds & raisin…
  4. Now add water/ milk to the broken wheat & mix well…
  5. Now cover it & let it cook for 9 - 10 min..
  6. After 10 min check the lapsi if it cooked then add sugar & nutmeg powder, mix well…
  7. Cover for 5 min & let everything cook properly…
  8. Garnish it with chopped almonds… lapsi is ready to be served
