However, custard, chestnuts (kuri), and cream (matcha cream, cream with fruits, etc.) are also popular. Dorayaki is a much-loved favorite among both children and adults in Japan. Dorayaki is a popular Japanese snack and dessert, made of honey pancake sandwich with sweet red bean filling.

To begin with this recipe, we must first prepare a few ingredients. You can have dorayaki using 12 ingredients and 10 steps. Here is how you cook that.

The ingredients needed to make Dorayaki:
  1. Take 100 g flour
  2. Make ready 2 eggs
  3. Make ready 2 tbsp Honey
  4. Take 20 g cane sugar
  5. Take 50 ml water
  6. Take 1/2 tsp baking soda
  7. Take 150 g Red bean paste
  8. Take 1 egg yolk (for custard)
  9. Get 10 g sugar (for custard)
  10. Get 1 tbsp corn flour
  11. Get 100 ml milk
  12. Prepare 2 tbsp Green tea powder

Dorayaki is a sweet that has been loved by all generations for its exquisite combination of Western-style pancakes and the Japanese sweet bean paste. Dorayaki has a very distinct appearance - round pancakes are dark brown, as if they are burnt. But the surface is so smooth that it reminds me of perfection. Dorayaki is one of the most popular Japanese confectioneries.

Steps to make Dorayaki:
  1. First, let's work on the Green tea custard. Transfer the egg yolk into a mixing bowl. Add in sugar, mix well. Then add corn flour and green tea powder, mix well.
  2. Warm the milk in medium heat until it starts boil. Carefully add in milk into the egg yolk mixture little by little. Mix well.
  3. Transfer mixture 2 back into the saucepan. Heat the mixture in medium heat. Keep mixing the custard while heating. The custard should be thicken while heating. (This usually takes 7-9mins)
  4. When the custard is ready, transfer them into a plate and cover with plastic wrap. Cool it in the fridge for at least 2 hours.
  5. Now, let's work on the pancakes of dorayaki. Put eggs in a mixing bowl and gently mix the eggs. Add in cane sugar and mix well until all sugar is dissolved.
  6. Now sieve in flour and baking soda into the egg mixture. Mix well until just combined. Do not over mix!
  7. Now dissolve honey in water. Add the water mixture in the egg mixture and mix well. Leave the mixture in the fridge for 30-40mins before frying.
  8. Heat the frying pan in medium heat. Put 2 table spoon of pancake mixture on to the frying pan. When there are small bubbles formed on the surface on the pancake, carefully flip the over the pancake and brown the other side. Repeat the step until you use all the mixture.
  9. Let the pancake to cook completely before putting the fillings.
  10. Put in enough amount of red bean paste and green tea custard into the one of pancake. Cover with another pancake. Gently press it the finish.

But the surface is so smooth that it reminds me of perfection. Dorayaki is one of the most popular Japanese confectioneries. It is Anko (sweet red bean paste) sandwiched between sweet pancakes. It is a Japanese sweet beloved by the old and young. It may be perfect for people who have never had any traditional Japanese sweets because it doesn't have any unusual ingredients.
