The ingredients needed to make Parmigiana:
  1. Prepare 1 large or 2 small aubergines
  2. Take Passata
  3. Prepare 2 mozzarella

  1. Wash and slice aubergines. Dry well both sides using kitchen roll.
  2. Cook on a grill pan, or frying pan in a little olive oil until brown on both sides
  3. Chop mozzarella and basil and start layering in a roasting tray, passata, mozzarella, basil, Parmesan, salt
  4. Continue layering
  5. Top with a bit of passata and Parmesan. Cook at 180 for about 40 mins. Leave to cool a bit and enjoy :)
