  1. Preheat the oven at 380F. In the mean time prepare the butternut squash but cutting into halves and season it with olive oil and salt.

  3. While the butternut squash is roasting prepare the stuffing.In a pan add olive oil, and garlic, Stir 1 min until fragrant
  4. Add quinoa, chickpea, cumin powder and paprika. Stir for another 2/3 mintues
  5. Now add orange zest and spinach and cook for another 2 mintues
  6. Your stuffing is now ready
  7. Take out the squash after roasting and add the stuffing
  8. Add micro Greens and Pomegranate on top and drizzle some olive oil
  9. Your stuffed Butternut Squash is ready. Enjoy ☺️
