  1. Prepare 150 g curly kale, any woody ends discarded,
  2. Get 100 g purple sprouting Brocolli, any tough ends removed,
  3. Take 85 g closed cap mushrooms, cut into slices,
  4. Take 80 g meat free mince,
  5. Take 1 tbsp Ranch dressing, (veggie friendly),
  6. Take Spray cooking oil, I used Sunflower,
  7. Get Salt and pepper to season
Steps to make Green Goddess Stir-fry With Ranch Dressing (Vegetarian):
  1. Heat up a wok over a high heat and spray liberally with cooking oil. Once hot add in the meat free mince and the brocolli stems. Season really well with salt and pepper. Toss and stir fry for 3-4 minutes.
  2. Add in the mushrooms and spray in a little more oil. Stir fry until the mushrooms begin to soften. Then, add in all of the curly kale. Season again with salt and pepper to taste.
  3. Stir fry and toss the ingredients around in the wok until the kale wilts down by half its size. The colour should still be a vibrant green and there should be a nice bite to the brocolli. Try a piece to test it, if necessary.
  4. Turn out into a shallow bowl or plate and finish by dressing it with some ranch. Eat whilst still warm and enjoy! :)
