  8. For the topping , mince the garlic. Mix with salt and oil. Spread over dough. Place sliced onions over dough then sprinkle grated cheese on top.
  9. Cover dough with wrap again and rest 15 minutes.
  10. In a preheated oven, 450°F., bake foccacia for 20 minutes. Cover with tin foil, lightly, and bake another 10.
  11. Let bread cool and cut into squares.
