Instructions to make Vanilla Custard:
  1. Heat the milk and vanilla, until it just comes to the boil.
  2. Whilst the milk is heating up, mix together the yolks, sugar and cornflour, it should look like a smooth paste.
  3. Slowly add the warm milk to the paste & stir well with a whisk.
  4. Put the mixture back in the saucepan and stir constantly with the whisk until the custard thickens.
  5. Top Tip: - On Britain's Best Home Cook I flavoured my custard with orange zest, and Mary Berry loved it, but you could use any flavouring you want, such as lemon zest of vanilla.

Bring to a gentle simmer over medium heat. Slowly whisk into the egg mixture. Immediately force custard through a fine-mesh sieve into a clean bowl and stir in butter and vanilla. Simple ingredients, milk, cream, egg yolks, vanilla and sugar and a lot of whisking will result in a sweet, velvety thickened cream - a custard - that can be eaten on its own or served over top of just about anything, from berries to pancakes. To cool the custard mixture, I float the mixing bowl in a larger bowl with some ice water.
