  27. Make ready 2 tbsp Melted Butter
  28. Take Pinch Dried Rosemarry
  29. Prepare Pinch Dried Thyme

  2. In a deep bowl, sift flour.add salt & semolina(sooji).add all seasonings.mix well
  3. Now check yeast.it must be proofed means swells up or double in size.add this yeast water to flour & fold the dough either with habds or spatula.mix olive oil as well.
  4. Fold all flour gently.you will need to add extra water 1/4-1/2 cup as well to make dough.I hv used 1/4 cup water more to make a soft sticky dough.focaccia dough is not smooth stable dough as for pizza yet it's rather sticky & soft.
  5. Cover the dough with clingfilm.leave to rest for 30min to 1 hr at a warm place.
  6. For toppings,there is wide variation of ingredients from simply herbs to fancy top ups.I hv used onion peels,tomato desseded,orange bellpepper julians,chop coriander,curry leaves,chop chillies(green or red),black & green olives.
  7. Grease baking tray with little oil or butter.in a bowl mix 2 tbsp water with 1 tsp Olive oil for dumping foccacia
  8. When thd dough has risen.take it out on flat dusted surface & roll it in soft dough ball.
  9. Place this dough in baking tray spread the dough in tray with hands only by just stretching it. Cover it with damp towel & leave to rest for 30 min.
  10. After 30 min, dough in tray has risen again.now take the water mix with oil.dip fingers in it & insert them in dough as shown in pictures making holes in all over the dough.this is imp step in making focaccia.the puddles made like this is specific feature of focaccia bread.
  11. Now place toppings over dough as you like.mix all herbs in melted butter & drizzle at top of bread topping.
  12. Bake in preheated oven at 180°c for 20-25 min.check after 20 min.bread must be risen up & leave the sides.insert a toothpik & check if it's comes out clean.it is done.beat 1 egg & baste the top with brush.carefull enough to avoid vegies.give heat for 3-5 min to add colour to bread.
  13. Enjoy a beautifull gardenescape focaccia with toss salad or herb butter dip or just likd that.it would be a heartfull delight for these rainy days
