  3. Add in the eggs, stir and then fold in the flour.
  4. Pour the cake batter into your baking tin, and bake at 180° for about 50 mins. Allow to cool completely before removing from baking tin.

Boiling brings out the flavor of the fruits. Combine the water, dried fruit, sugar and butter in a saucepan over medium heat. Sift the flour, bicarbonate of soda and mixed spice into a large bowl. Pour in the boiled mixture, and stir until well blended. Slowly bring to the boil then remove from heat and add bicarbonate of soda mixed with one tablespoon boiling water.
