Hey everyone, it’s Drew, welcome to our recipe page. Today, we’re going to make a special dish, light fruit cake. One of my favorites. This time, I am going to make it a little bit unique. This will be really delicious.

Add candied fruits, raisins and almonds; toss together to coat fruit with dry ingredients. Beat butter in another bowl until creamy. Add sugar; continue beating until mixture is light and fluffy. Gradually stir in fruit mixture until well mixed.

My light fruit cake recipe is made with the creaming method, similar to my upside-down plum cake recipe. You take the butter and sugar and beat it till pale and creamy. Next, you're going to add in the ground almonds and beat well again. Adding the almonds at this stage significantly reduces the risk of your cake batter curdling.

Instructions to make Light fruit cake:
  1. Preheat the oven
  2. Grease ur cake pan with butter and spkinle flour
  3. Cream the butter and sugar till it fluffy.
  4. Add flavors and stir, add your whisk eggs and mix all together.
  5. Sieve flour, baking powder, in a bowl,
  6. Add all dry ingredients together
  7. In ur 3 and 4, add all other liquid to the mixture
  8. Pour all dry ingredients into the liquid mixture and fold together.
  9. Coat ur fruits with flour and mix all together
  10. Pour ur batter into ur grease pan
  11. And dress it with little fruits
  12. Bake from 120c for 30 to 40min

Next, you're going to add in the ground almonds and beat well again. Adding the almonds at this stage significantly reduces the risk of your cake batter curdling. In another bowl, cream shortening and sugar until light and fluffy. One-half hour before cake is done, brush top with corn syrup. Decorate with pecan halves and finish baking.
