One-half hour before cake is done, brush top with corn syrup. Decorate with pecan halves and finish baking. During the cooking process, it will spread and the fruit will be encased in the cake. Serve warm or at room temperature, dusted with icing sugar.

Steps to make Fresh fruit cake:
  1. In a mixing bowl take all the wet ingredients including sugar whisk well with electric beater or manually,
  2. Now mix all the dry ingredients together, add in whisked wet ingredients and fold gently
  3. Now shift the cake batter in to greased cake tin, bake it in preheated oven on 180 degree for 35-40 minutes,
  4. Take out and cool the cake completely, cut the cake in to two layers,
  5. Apply sugar syrup on the bottom layer of the cake, evenly spread some whipped cream arrange some chopped fruits,again spread some whipped cream on top of the fruits evenly
  6. Now place other layer of the cake on the top, apply some sugar syrup, evenly spread whipped cream on the top, keep the cake in the fridge at least for 30 minutes, then take out the cake, decorate with some chopped fresh fruits, your delicious cake is ready to serve.
